Ingredients

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup milk
  • 1 cup cheddar cheese
  • 1/2 cup tomatos chopped - optional
  • jalapeño chopped - optional, to taste
  • 1/2 cup salsa optional - see site for recipe

Instructions

  • Melt the butter in a heavy sauce pan, add flour until it bubbles.
  • Add the milk, blend flour and butter mixture to ensure no lumps and let cook for about 5 - 10 min to thicken and reduce the flour taste.
  • Add the cheddar cheese and reduce heat stirring constantly to melt all the cheese. Add the optional ingredents and serve with chips or in other tex-mex recipes.
  • note: If you use the salsa as an optional ingredient then you probably don't need to add the optional tomatoes to your finished recipe.
