Growing up, this dish was a staple of our Sunday morning routine. I’ve taken my dad’s classic version and elevated it with the addition of vegetables, paprika, and chili flakes. This recipe is perfect for a family-style breakfast, often setting the stage for a relaxed, leisurely day spent together.
Ingredients
- 7 whole Potatoes washed and peeled
- 1 whole Onion diced
- 1 whole Green Pepper finely chopped
- 1 whole Red Pepper finely chopped
- 4 tbsp Frying Oil
- 2 tsp Paprika
- Salt & Pepper to taste
- Red Chile flakes optional to taste
Instructions
- Grate the wash & peeled potatoes either with a hand grater or food processor.
- Rinse the grated potatoes and use a kitchen towel to squeeze most of the water from the potatoes.
- In a large frying pan. Heat the oil, distribute the oil around the pan. Place the drain potatoes in the hot pan stirring occasionally.
- After about 5 minutes, add the onions, green and red peppers to the pan. Continue to stir and cook all the ingredients.
- Season with paprika, salt and pepper to taste. Mix well and cook until the potatoes are tender.
- Add Chile flakes if you like the heat and serve.
